Thank you to the cultural communities that chose Québec! More and more, people are turning towards cuisines from around the world. Before, people would say, “Is there a substitute for this?” Now, I get asked, “Where can I find this?” So authenticity is increasingly important. We want to recreate the foods we’ve eaten abroad. And growers have definitely understood this. Before, there were fewer “exotic” products grown here. Today, farmers grow bok choy and pattypan squash. 

“Long live our cultural communities!” happily affirms Nicole Anne Gagnon, chef and instructor at the Institut de tourisme et d’hôtellerie du Québec. They enrich our local cuisine with ingredients that are imported and even with some that are grown here.
