Whitefish caviar

While imported products remain popular, local artisans continue to unearth unexpected treasures from right beneath our feet—and canoes! Looking for a local luxury? Try whitefish caviar from the cold-water species that lives in lakes and rivers across Québec and Canada. To collect the eggs, the females are fished from late October to mid-November, just before the waters freeze. The fish are then washed, drained and salted at Poissonnerie G.M.S. in Abitibi-Témiscamingue to make the fine, coveted golden caviar.
